Tasting notes：

Nose: Someone's stolen a lorryload of quinces, distilled the whole lot, and let it mature in good quality oak for a long time. What really strikes me here is that we would be pretty close to malt whisky. Some cedar wood and artisan cider are topping all that. 

Palate: I don't like to use the word 'rustic' too often but this surely is rustic, we're pretty far from the champagnes and more on stalk, leaves and stems than on ripping tropical fruits and honeys. Almonds, kirsch, plum spirit… 

Finish: same. Some liquorice wood.
